Grilled Pineapple

Makes 4 servingsIf you’d like, drizzle the warm pineapple rings with fresh lime juice and serve with dollops of vanilla yogurt.
8 (½-inch) fresh pineapple rings
Canola oil for brushing
3 tablespoons packed brown sugar (see Tip)Heat a stovetop grill pan over high heat. When a drop of water sizzles, lightly brush both sides of the pineapple rings with oil and place on the pan. (Or prepare the outdoor grill.) Grill for 2 minutes per side or until lightly browned.
For each serving, transfer 2 pineapple rings to a dessert plate and, while the pineapple is very warm, sprinkle with about ½ tablespoon brown sugar. Serve warm.
